«Grilled oysters with tartar»

Ingredients:
24 oysters
2 shallots
1 apple
1 small bunch of parsley
1 small bunch of coriander
1 tomato, peeled and de-seeded
Chives, to taste
½ red pepper
5 grapes, peeled and de-seeded
10 ml olive oil
20 ml Jerez vinegar
Preparation:
Chop all the vegetables, fruit and herbs as finely as possible. Mix with vinegar and olive oil. Season with salt and pepper. Grill the oysters until they open.

Service:
Place 6 oysters on each plate, removing the top shell, and placing a teaspoon of the vinaigrette on each one.
